Leviticus 23:10 Speak to the chilldren of Israel, and say to them: When you comr into the land which I give to you, and reap its harvest, the you shall bring a sheaf of the firstfruits of your harvest to the priest. 11 He shall wave the sheaf before the Lord, to be accepted on your behalf on the day after the Sabbath the priest shall wave it. 12 And you shall offer on that day, when you wave the sheaf a male lamb of th efirst year, without blemih, as a burnt offering to the Lord. 

This is the day following the first day of Unleavened Bread, which is a Sabbath or holy assembly. This is called the Day or Festival of First Fruits. In Hebrew it is Chag HaBikkurim. It is also called Reishit Katzir {Reshit Katzir}. It is the beginning of the Barley Harvest. This is also the starting of the counting of the omer to Shavuot, the Feast of Weeks.

According to the Talmud, Israel is considered the barley; for they are the firstfruits for salvation. They are God’s peculiar people, 

I Corinthians 15:2 But now Christ is risen from the dead, and has become the firstfruits of those who have fallen asleep. ..23 But each one in his own order: Christ the firstfruits, afterward those who are Christ’s at His coming.

Revelation 1:5 and from Jesus Christ, the faithful witness, the firstborn from the dead, and the ruler over the kings of the earth.

Colossians 1:18 And He is the head of the body, the church: who is the beginning, the firstborn from the dead; that in all things He may have the preeminence.

Acts 26:23 that the Christ would suffer, that He would be the first to rise from the dead and would proclaim light to the Jewsih people and to the Gentiles.

This Feast represents Jesus because He is the firstfuits from the dead. No one else has been risen from the dead except the Lord Jesus Christ.
